Our next cookery course is based on a Southern Italian Lunch and we will explore dishes from Calabria where I was lucky enough to spent my summers with my Nonna … e-mail me at thecook@cici-coco.com.

We will be using the very in vogue ingredient ‘Nduja. It is a product I grew up with in Calabria and on all the coolest London menus right now!… it is a spicy hot, smokey spreadable pork sausage. It is a fantastically versatile ingredient, perfect as the base for pasta sauces, spread in bread, mixed with pasta. At its most simple it is a mix of pork, sweet pepper and hot peppers (the peppers have a very specific taste and smell from been grown in the Calabrian sun.)
