Cookery Class Dates

The aim of the school is to inspire you with some of the great local ingredients and produce and combine them with some regional Italian dishes. The courses are suitable to everyone and take inspiration from the best of local, seasonal produce and a region of Italy to create the menu of the day.

In the kitchen you will be introduced to the local ingredients (in some cases pick them!), prepare and then eat the dishes on the menu.

We have chosen a series of beautiful locations to host our courses including Sandy Lane Organic Farm, private manor house Tyringham Hall and our own award winning kitchen.

Summer in the South of Italy: Pasta Masterclass !

Join this class to cook your summer favourite southern Italian pasta dishes  using all the great fresh vegetables from the farm! We will be making fresh award winning pasta using an amazing variety of fresh ingredients to create great everyday dishes and more sophisticated dishes to enjoy with your family! Do not miss it!

AUGUST
Summer in Sicily and Calabria: the tomatoes.

Sicily and Calabria are the inspiration to celebrate one of the most iconic flavours of Italy: the tomato. We will be making some flavoursome dishes from the tradition, make some passata and of course some perfect pasta!

SEPTEMBER
Harvest Festival Italian Style: the grains. Pasta e Polenta.

@College Farm, Long Crendon – £95
In this class we will be celebrating the Harvest. We will be using the amazing Heritage Organic flour from Prestwood and polenta from an Italian Heritage crop from the Alps of the Friuli region to create beautiful dishes. All the recipes are from the Italian tradition to celebrate this fruitful time of the year.

OCTOBER
Autumn in the North of Italy. Vegetarian!
08/10/2015 – Saturday 10-2.00pm
@College Farm, Long Crendon – £75
Local cheeses, cured meats, mushrooms and polenta, local produce used to recreate the flavours of the mountains from Trentino, Veneto and Friuli Venezia Giulia: some interesting pasta making and unusual regional recipes will make you fall in love with an unknown culinary Italy influenced by the neighboring countries of Switzerland, Austria and Slovenia.
