Our next cookery course is based on a Southern Italian Lunch and we will explore dishes from Calabria where I was lucky enough to spent my summers with my Nonna … e-mail me at thecook@cici-coco.com.

We will be using the very in vogue ingredient ‘Nduja. It is a product I grew up with in Calabria and on all the coolest London menus right now!… it is a spicy hot, smokey spreadable pork sausage. It is a fantastically versatile ingredient, perfect as the base for pasta sauces, spread in bread, mixed with pasta. At its most simple it is a mix of pork, sweet pepper and hot peppers (the peppers have a very specific taste and smell from been grown in the Calabrian sun.)

‘Flavours of Calabria’

Our next cookery course / Sat 10th May 2014 / £65 pp

In our next cookery course we will be exploring the flavours of Calabria with some very special local ingredients. Calabria is an region I know well from my childhood, I can remember many happy hours cooking with my family using some very simple and beautiful, ingredients… the day will take place in the Beam Cottage kitchen from 10am-1pm. You will be able to take some dishes home to share with your family…
