For 2015 our cookery classes focus on simple regional Italian cooking with the freshest ingredients. At the end of the cooking we will sit together to experience a three courses meal in a relaxed and pleasant atmosphere, just like Italians do!

SEPTEMBER 2015
Autumn Heritage Harvest in Friuli
12/9/15 – Saturday 10-2
 @Beam Cottage or Prestwood (tbc)
In this class we will be celebrating the Harvest. We will be using the amasing  Heritage Organic flour from Prestwood and polenta from an Italian Heritage crop from the Alps of the Friuli region to create beautiful dishes. All the recipes are from the Italian tradition to celebrate this fruitful time of the year.

OCTOBER 2015
Autumn in the North of Italy.
10/10/2015 – Saturday 10-2pm
@Beam Cottage – £75
This will be a real celebration of the Autumn flavours. Pumpkin is a really versatile vegetable and we will look into the Italian tradition to pair it with other seasonal ingredients and meats to make easy and tasty recipes: ravioli, pasta sauces, risotto and gnocchi. We will also make a sweet treat!

NOVEMBER 2015
An Italian celebration of the English pork: Il maiale
14/11/15 – Saturday 10-2
@Beam Cottage – £95
We will take inspiration from traditional recipes from the North and the South of Italy to celebrate this tasty and versatile meat. We will be tasting different cuts of pork from pigs reared in the Buckinghamshire area and we will be making some Italian sausage meat, pork escallops, pasta sauces, meatballs and more!

DECEMBER 2015
An Italian celebration of the English game: Duck and pheasant. Anatra e fagiano. 
5/12/15 – Saturday 10-3.30
@Tyringham Hall 10-3.30pm – £115
Join this class to cook and enjoy Aylesbury duck and pheasant the Italian way. We will be experimenting with pasta sauces, filled pasta and more to create elegant alternative dishes to your Christmas menu!

JANUARY 2016

16/01/16 – Saturday 10-2
An Italian celebration of the English beef and pink veal:  manzo e vitello. @Beam Cottage – £ 95
This class is a celebration ot the great Local beef Italian style. We will be tasting veal and beef from the Buckinghamshire farms and we will make some Italian great classic dishes from Tuscany, Milan and Bologna: perfect winter comfort food!

FEBRUARY2016
6/02/16 – Saturday 10-3.30
Winter warmers: The flavours of the Italian Alps.
@Tyringham Hall – £115
Local cheeses, cured meats, mushrooms and polenta, local produce used to recreate the flavours of the mountains from Trentino, Veneto and Friuli Venezia Giulia: some interesting pasta making and unusual regional recipes will make you fall in love with an unknown culinary Italy influenced by the neighboring countries of Switzerland, Austria and Slovenia.

19/03/2016 – Saturday 10-2
Easter Italian Style: the lamb 
@Beam Cottage – £95
A range of classic Italian recipes and local lamb will create a new Easter menu. We will be making fresh pasta with lamb ragú, ravioli and an unusual main course to celebrate Easter the Italian way.

APRIL 2016
23/04/2016 – Saturday 10-2
The flavours of spring: from the land and the wild

Join this class to make the best of this special season and the Buckinghamshire countryside with recipes inspired from the North and central regions of Italy: Friuli, Veneto, Tuscany and Marche.  We will be using foraged herbs and game to create the ultimate Buckinghamshire lunch!

MAY 2016

Spring Recipes from Tuscany

Using local and seasonal ingredients you will re-create the flavours of one of
the most interesting regions of Italy to taste for lunch. Simple cooking, fresh

Pasta Masterclass!

Join this class to cook your summer favourite pasta using all the ingredients from the farm! We will be making fresh award winning pasta using an amazing variety of fresh ingredients to create great everyday dishes from salads to sophisticated ravioli to enjoy with your family!

We have chosen a series of beautiful locations to host our courses including Sandy Lane Organic Farm, private manor house Tyringham Hall and our own award winning kitchen.

Cooking lasagna with the doors open…

‘It’s the delicious smell that does it.  I wasn’t intending to order this week but if you have a two-person lasagne bolognese to spare I’ll give it a home.E’ tutta colpa di quel profumino delizioso! Non avevo intenzione di fare un ordine questa settimana ma se hai una Lasagna alla Bolognese per due persone che ti avanza gli do volentieri un nuovo domicilio.’
